Our family farm is an artisanal, independent and locally owned small business that breeds only 100% full-blood Wagyu to provide the highest quality, all-natural beef with remarkable taste and tenderness.

This isn’t “American Wagyu” – which is a genetic mix of Japanese and American cattle stock. Carney Wagyu is full-blood with no crossbreeding – traceable to the original Japanese source of the most sought-after beef in the world.

Our benchmark is Wagyu beef with a BMS of at least 5 and an IMF of 40% or better.

Genetics

Our herd is 100% full-blood Wagyu; DNA is certified by the American Wagyu Association and traceable to its Japanese origins.

We build our herd by DNA and SCD testing the parents of every calf to ensure every animal has the genetic makeup to produce beef that meets the high standards of Japan’s own Wagyu marketplace.

We only select embryos that carry the preferred AA genotypes, and typically a tenderness marker of 5 or better, to produce cattle with intense marbling and tenderness to meet the demands of the most discriminating chefs.

Care and Feeding

Great Wagyu is about more than genetics. It’s also about the practices that go into caring for the cattle. Carney Wagyu Cattle Ranch follows Japanese standards for care and feeding and uses modern science to overcome differences in climate and geography.

Our cattle are native to Northeast Ohio and fed a proprietary supplemental grain mix to build valuable fat and encourage flavor and tenderness. We don’t use any added hormones or steroids; antibiotics are used minimally and only when necessary.

Our cattle are allowed to move freely from barn to fields to feed bunker. They can feed anytime they like and are free to follow their own most natural behaviors. They’re protected from extreme weather and handled gently.

In Japanese tradition, handlers care for only a few cattle at a time. Similarly, Carney Wagyu Cattle Ranch keeps its herd small, which allows us to know each animal individually so we can recognize and address any health, nutrition or behavior concerns.

Wagyu cattle mature at a slower pace than Angus and other American breeds, which are typically harvested at 16 months of age. In line with Japanese practice, our cattle mature for up to 30 months, allowing the intramuscular fat to reach its full potential.

Beef Production

Our cattle are harvested humanely, dry-aged for up to four weeks and butchered into a wide variety of steaks and chops, including Wagyu ribeyes, porterhouses, strips, filets and more. We are able to provide custom cuts and fresh beef for businesses. We care about our craft and look forward to serving you.
